Tipica varieties
Carlos Torrebiarte shows one of his typica coffee plants. The tipica varieties were brought by the Spanish to Central America and predate the improved varieties used over most of the world. Carlos works at planting and preserving these tipica varieties. He maintains that, while the tipica plants tend to be large and scraggly, the taste of tipica coffees is unparalleled.
