Maple syrup is made from the 12 hectares of maple forest, which holds 2,000 taps. Trees have one to four taps each and are tapped in February. Some of the maple trees, like these, are quite old and and stately. D-Trois-Pierres makes and sells maple syrup and maple candy. Some of the maple candy even makes it into their CSA subscription boxes as a special treat for the members.
